The Shari Cooperative was formed in 2000 and over the last 15 years has strived to inprove quality and productivity. The harvests are hand picked and delivered to the Shari Coop's processing unit near the town of Moshi. Here the coffee is hand sorted to ensure only the best cherries are retained. Following this the cherries are sorted by density to remove underdeveloped beans then washed, fermented and pulped. Drying takes place on raised beds for a period of between 14 and 21 days.
