This Bourbon and Caturra mix is sent for decaffeination to the Sanroke company in Mexico where it is processed using the 'mountain water method'. This is the same process as the 'swiss water method' but sources its water from the galciers of the Pico de Orizaba mountain in Mexico. The coffee is repeatedly washed in the water saturated with the compounds found in coffee that are desirable to reduce or eliminate any loss of such from the bean. The caffeine is extracted first from the bean and then from the solution to maintain the diffusion gradient. Up to 99.9% of the caffeine can be removed in this way without adding any additional harmful chamicals to the process.
