Ethiopia is known as the birthplace of coffee and has more than 1.1 million small hold coffee farmers. The Sidamo region is known for producing clean and unique tasting washed coffees with interesting fruit notes.
The Layo Terega co-operative is part of the larger Oromia co-operative union. They process coffee cherries delivered to collection points by small hold farmers. All the farms are located at very high altitudes above 2000 masl. The cherries are hand sorted first then processed using the washed method and graded in washing channels before undergoing 12-24 hours of wet fermentation. After this process, the cherries are sundried for 10-15 days on raised tables.
This coffee has lots of distinctive tropical fruit notes similar in fact to what we would expect from a natural processed coffee. This makes it fantastic as a filter coffee served black. It's also very interesting for espresso if you enjoy bright, fruity coffees!
