Las Lajas is an organic micromill located in Sabanilla de Alajuela in the Central Valley region of Costa Rica. Las Lajas processes coffee from their family farms. Water use is minimal as they focus on 'honey' processing methods. This involves leaving 100% of the coffee mucilage (fruit) on the cherry during the drying process. The 'Alma Negra' version is turned just a few times per day. The resulting cup is 'funky' with rich dried fruit and berry notes!
