The Minas Gerais region of Brazil is well know for it's approach to speciality coffee. While much of the coffee grown and harvested in Brazil is low grade and machine harvested the better farms take a very different approach. While machine harvesting is still used it's done so using very modern technology that results in careful sorting after the harvest has taken place to make sure that only the ripe cherries are processed as part of speciality grade lots. We've purchased an exclusive lot that has been natural processed, dried under the sun on large patios.
We roast this a little darker than we would with some of our brighter, fruitier coffees (about mid way between the end of 1st crack the start of 2nd). This brings out lots of body and chocolate notes with a muted acidity and some nice caramel and stone fruit sweetness.
