Set into the mountain region of Apaneca-Ilamatepec, near Santa Ana, the sprawling Finca San Fransisco complex is divided into a number of smaller lots, each separately managed and processed. The Las Ranas farm house, adorned with it's namesake frogs, is surrounded by immaculately maintained bourbon and pacas varietals. During the harvest season this is all hand-picked during the day before being delivered to the Las Cruces mill for processing each evening.
The standard of processing at Las Cruces mill is incredible with the Las Ranas representing the very best aspects of the pulped natural process. The coffee is pulped in clean water before being being moved to the picturesque patios for drying. Allowing for some mucilage to dry on the parchment brings a heavier cup profile best suited to espresso brewing. Expect fudgy toffee apple, swiss chocolate and the subtle zing of blood orange.
