This coffee is decaffeinated using an organically certified method of carbonising water using naturally occurring CO2 from underground lakes to create a high solvent substance for caffeine. The gentle nature of this process helps to retain a high level of desirable compounds in the coffee that contribute to the delicious cup profile.
There’s a clean & medium intense acidity with a persistent sweetness of plums, with an underlying cocoa quality and flavours of molasses on the finish.
