Situated in the foothills of the massive Santa Ana Mountain that dominates the skyline for many miles around this small, beautiful, ten hectare farm is owned and run by Joe Molina.  \u003cbr\u003e\u003cbr\u003eJoe is an award winning farmer and his family's other farm, Bosque Lya, won the El Salvador Cup of Excellence way back in 2004. After this win he stopped entering the competition but continued to apply all the farming and processing skills that won the award into his coffee production.   The farm grows both the red and yellow fruiting bourbon coffee variety and for this special lot for Artisan Roast Joe selected a small parcel towards to top end of the farm growing yellow bourbon and processed it separately.\u003cbr\u003e\u003cbr\u003eIn the cup this micro lot displays a complex cup.  We find salted caramel leads the front of the tasting and this leads on to a sweet red berry note with honeycomb and a little milk chocolate in the mid range.  The body is viscous , mouth expanding and rounded and the acidity is classic El Salvador Bourbon … medium, complex and lingering with a blood orange like finish.  These characteristics make it a very versatile coffee to brew and whether through filter, french press or espresso there are a range of characteristics to be found. Dukunde Kawa run three washing stations in the Gakenke District serving around two thousand farmers in total.  Ruli Musasa is the most southerly of these, perched at the dizzying height of 1999 metres above sea level and over looking the coffee trees surrounding it.   The local farmers, of which nine hundred deliver their coffee to Ruli Musasa on average own around a quarter of an acre of land on which they may grow up to three hundred coffee trees.  \u003cbr\u003e\u003cbr\u003eProcessing in Rwanda is similar in style to neighbouring Kenya, and one distinct feature of this style not commonly carried out in Latin America, is to soak wet parchment coffee for up to a day after fermentation is finished.  Whilst the origins of this add on to the washed process is not clear what is known - thanks to research in Kenya during the 1960s - is that some bitter compounds are removed from the coffee in this final stage.  This helps reduce bitterness in well processed coffees allowing for sweetness and acidity to shine through with clarity and elegance.\u003cbr\u003e\u003cbr\u003eRuli Musasa is a perfect example of this clarity and elegance.  Truly stunning, it displays bold red fruit driven flavour profiles and silky smooth body.  This lot has a floral front end and flavours of milk chocolate and dates dominate the cup.  We have roasted this small lot to accentuate the dense, sweet and syrupy mouth feel, making this a great coffee to try as a single origin espresso. This means the coffee has to be hand picked, allowing for closer control over quality from the outset of processing.  Thereafter, a number of different processes are used by the Pereira sisters, and this year we've selected two for Artisan Roast.\u003cbr\u003e\u003cbr\u003eFor natural processed lots Irmãs Pereira's coffee is harvested only when the cherries reach an advanced stage of ripeness.  All the cherries are handpicked and then res-sorted to remove unripes and over-ripes leaving a homogeneous selection of pure ripe cherry.  In this case of this Yellow Bourbon lot, perfectly ripe fruit is a slightly orange-pink yellow colour.   The coffee is immediately dried in the sun on the farm’s patios producing a rich, dense and fruity cup.\u003cbr\u003e\u003cbr\u003eIn the cup the natural from Irmãs Pereirais supremely balanced.  The main flavours of candied roasted peanuts and milk chocolate roll over the palette and the more subtle flavours of rasins, amareno cherries and black grape come through on a smooth deliious aftertaste.  This is a full bodied low acid coffee, but the subtle acids that are present are grape like and give a hint to the excellent processing of this lot.\u003cbr\u003e\u003cbr\u003eIn terms of brewing this coffee offers a range of options.  As an espresso the milk chocolate and caramel aspect of the flavour profile are more present, and lend themselves well to milk based espresso drinks.
