Close to the town of Takengon and Lake Tawar there are 25 members of the Jagong Village Cooperative where they grow organic coffee alongside chillies and red beans on land that averages around one hectare in size. At an altitude of 1,600 meters the rich and fertile soil produce coffees that are unrivalled in their depth of body with fascinating complexity.
The coffee is semi washed and wet-hulled, a process that involves part-drying of freshly pulped beans before removing the parchment and allowing the swollen beans to be sun dried to a deep green colour.
This method of processing produces more body and more of the character that make Indonesian coffees so unique.
