Prototype is roasted light-medium to bring out complex floral & delicate soft-fruit notes & maximise sweetness, making an espresso that works really well on its own or in short milk drinks.
Currently it consists of 70% Guatemalan Atitlan, grown in volcanic soil in a unique microclimate by the shores of Lake Atitlan, giving a caramel sweetness & buttery mouthfeel to the blend with bright notes of melon & citrus notes. The other 30% is the amazing Natural Ethiopian Yirgacheffe from the farms around the beautiful Shalaitu washing station, the name of the glittering stream running off Rocko Mountain. This brings a floral, blueberry aroma & extra citrus notes to the blend.
