Guacacayo is a community, also referred to as a vereda, within Pitalito. Pitalito is located in the south of Huila near the central and west mountains. The altitude ranges from 1000 masl to 2400 masl, with average temperatures of 18 to 21°C. Huila has diverse environmental conditions providing lots of water and natural resources. Huila has a tropical climate, with annual rainfall of 1516 mm/year.

This coffee is cultivated on rocky and volcanic soils. It is washed and dried on parabolic beds, which are similar to raised drying beds. They are specifically designed for use in regions that do not have consistently dry conditions during harvest, like in Colombia.

We chose the Guacacayo because of its amazing strawberry like qualities and balanced acidity.
