Many farmers simply do not produce enough fruit to fulfil roasters requirements and so NA’s project brings together the hard work carried by several producers who’s commitment to quality meets NA’s exacting standards. We felt that work really showed in the cup with this coffee, with that beautiful buttery charcter that Huila so often delivers, but also a lovely blackberry flavour & a super clean yet balanced acidity.
The farmers in the program pick, process & dry their own cherry (in this case 100% Caturra) before they then deliver small lots on a almost daily basis to the mill in Los Cauchos as parchment. Due to the irregularity in size of each days picking, the mill will consolidate each parchement delivery according to picking day & time to ensure a perfect even and developed ripeness in the cherry.
For us, this is the kind of coffee that makes Colombia such a special country for speciality coffee production and one that we have some exciting plans for in 2016!
