This coffee is grown by around 1000 smallholders in 5 different locations around San Agustin in the Huila region. The altitude of the small holdings varies from 1300 to 1900 metres above sea level (averaging at 1700 masl), with the main harvest between October and January and a smaller fly crop between May and September.
The Processing
This is a washed process coffee- the ripe cherries are picked and sorted, defect cherries as well as unripe/overripe cherries are removed. The cherries are then pulped to remove the bulk of the fruit flesh, then the coffee is then soaked to remove the rest of the fruit. The clean coffee is then dried in raised beds.
